I’ve been working on this stock for nearly 3 and a half hours now. My back is sore from standing over the pot skimming the gunk out. There’s a possibility that I may or may not have messed up the recipe, but I won’t find out for another 30 minutes. In case you’re wondering, there’s a whole pineapple, onion, ginger, chunks of coagulated pork blood, several stalks of lemon grass, and beef tendon floating or poking out at the top.

There is this really good Chinese restaurant near where I live that makes a great dish involving chicken breast sauteed with asparagus and white rice. I always jokingly ask the owner for recipe hints because I’ve never tasted chicken so moist and tender, and I’m sure there’s some elaborate secret involving Tiger Balm. This ointment is the answer to everything. But seriously though, I want the recipe because I can’t keep paying 8 dollars a few times a week when I’ve no income.
The Gypsy Den is my kind of cafe. Good food, good live music and angsty hipster servers - this place has it all.

I ate all but two bites and complained to her that the meat patty was undercooked and requested a comp meal. I’m going to teach her Front of House skills even if it’s the last thing I do.
